  I can only imagine the amount of media that can be associated with a successful listing site. Can anyone recommend a media folder WordPress organizer plugin that plays nice with HivePress?

  The default settings should be ok, images will be organized by year/month. I recommend using some CDN plugin to offload images instead of storing them directly on your site (some hosting providers offer this service).
