  I’ve heard that an escrow function is necessary for a freelance marketplace theme. Do you have this or can this be added through a Woo plugin?

  It works this way by default, all payments are made to the site owner’s account, and seller gets the order amount only if the buyer marks an order as “completed”. Then the seller can request a payout (you can set the minimum payout amount, and process payouts according to your site terms, e.g. once a month).
